- small potato
- 1 box xxx sugar
- 1/2 tsp. vanilla
- peanut butter
Directions

1Boil small potatoes whole in skin until done.

2Cool somewhat and peel.

3Mash potato with fork and slowly add xxx sugar, a small amount at a time, until you use up the box of sugar.

4Add vanilla and mix thoroughly.

5Should be a stiff ball.

6Roll it out on wax paper using a little xxx sugar if sticky on wax paper.

7Spread peanut butter all over the top.

8Roll up jell-roll style and refrigerate 2 to 3 hours.

9Slice in 1/2-inch thick (or less) and serve.

10Preparation time:
