  • 9 to 12 medium potatoes
  • 1 can cream of chicken soup
  • 1/2 c. diced onion
  • 1/4 c. melted butter
  • 1 pt. sour cream
  • 1 1/2 c. sharp grated Cheddar cheese
  • 1 Tbsp. chopped parsley
  • salt and pepper to taste
  • bread crumbs

Directions

    Boil potatoes with skins on; cool, peel and grate into large bowl.

    Mix the rest of the ingredients, except for the bread crumbs.

    Put potatoes and mixture into well-buttered casserole. Top with bread crumbs.

    Bake for 1 hour at 375°.
