- 9 to 12 medium potatoes
- 1 can cream of chicken soup
- 1/2 c. diced onion
- 1/4 c. melted butter
- 1 pt. sour cream
- 1 1/2 c. sharp grated Cheddar cheese
- 1 Tbsp. chopped parsley
- salt and pepper to taste
- bread crumbs
Directions

1Boil potatoes with skins on; cool, peel and grate into large bowl.

2Mix the rest of the ingredients, except for the bread crumbs.

3Put potatoes and mixture into well-buttered casserole. Top with bread crumbs.

4Bake for 1 hour at 375°.
