Potato Cheese Bake

  • 6 medium potatoes
  • 20 oz. sour cream
  • 1 1/2 c. grated Cheddar cheese, divided
  • 1 bunch chopped scallions
  • salt and pepper to taste
  • bacon bits (optional)
  • chives (optional)
  • chopped green scallion tops (optional)

Directions

    Boil potatoes in jackets until fork-tender.

    Refrigerate potatoes until cold (approximately 1 hour).

    Peel and grate cold potatoes.

    Add sour cream, 1 cup grated Cheddar cheese, scallions, salt and pepper.

    Put mixture in buttered casserole dish.

    Top with 1/2 cup grated Cheddar cheese and bacon bits.

    Chill for several hours.

    Bake at 350°, uncovered, for 35 to 45 minutes. Garnish with chives or chopped green scallion tops, if desired. Makes 6 to 8 servings.
