Potato-Cheese Scallop

  • 1 medium onion, thinly sliced
  • 2 Tbsp. melted butter
  • 6 medium potatoes, thinly sliced
  • 1 c. sharp Cheddar cheese, grated
  • 2 Tbsp. flour
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 2 1/2 c. milk

Directions

    Saute onion slices in butter.

    Place 1/4 potatoes in bottom of greased 2-quart dish or casserole.

    Add 1/2 each onion slices, cheese, flour, salt and pepper.

    Repeat layers.

    Pour milk over. Cover and bake for 1 hour.

    Remove cover and bake 15 minutes longer.

    Serves 6.
