- 3 eggs
- 3 Tbsp. shortening
- 4 tsp. baking soda
- 1 tsp. salt
- 3/4 c. sugar
- 2 3/4 c. flour
- 1 tsp. salt
- 1 c. instant mashed potatoes
Directions

1In a large bowl, beat eggs, sugar and shortening. Combine dry ingredients. Gradually add to egg mixture alternately with mashed potatoes.

2Dough should be smooth.

3Chill at least 2 hours. Divide dough in half.

4Roll out to 1/2-inch thickness. Cut with doughnut cutter.

5Heat oil to 375° in deep fat fryer. Drop in doughnuts. Turn as they float to top and fry to a golden brown. May roll in sugar and cinnamon or powdered sugar.
