Potato Donuts

  • 3 eggs
  • 3 Tbsp. shortening
  • 4 tsp. baking soda
  • 1 tsp. salt
  • 3/4 c. sugar
  • 2 3/4 c. flour
  • 1 tsp. salt
  • 1 c. instant mashed potatoes

Directions

    In a large bowl, beat eggs, sugar and shortening. Combine dry ingredients. Gradually add to egg mixture alternately with mashed potatoes.

    Dough should be smooth.

    Chill at least 2 hours. Divide dough in half.

    Roll out to 1/2-inch thickness. Cut with doughnut cutter.

    Heat oil to 375° in deep fat fryer. Drop in doughnuts. Turn as they float to top and fry to a golden brown. May roll in sugar and cinnamon or powdered sugar.
