Ingredients

  • 3 eggs
  • 3/4 c. sugar
  • 3 Tbsp. soft shortening
  • 2 3/4 c. flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 3/4 tsp. mace
  • 1 c. mashed potatoes

    Beat eggs until very light.

    Add sugar gradually and continue beating until very light.

    Measure and sift dry ingredients, add to egg mixture with mashed potatoes.

    Mix only until well blended. Chill dough thoroughly before rolling out, an hour or two if possible.

    Roll dough about 1/3-inch thick.

    Cut with floured doughnut cutter.

    Fry in deep fat at 375° for about 3 minutes. Makes about 2 1/2 dozen.
