- 3 eggs
- 3/4 c. sugar
- 3 Tbsp. soft shortening
- 2 3/4 c. flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. nutmeg
- 3/4 tsp. mace
- 1 c. mashed potatoes
Directions

1Beat eggs until very light.

2Add sugar gradually and continue beating until very light.

3Measure and sift dry ingredients, add to egg mixture with mashed potatoes.

4Mix only until well blended. Chill dough thoroughly before rolling out, an hour or two if possible.

5Roll dough about 1/3-inch thick.

6Cut with floured doughnut cutter.

7Fry in deep fat at 375° for about 3 minutes. Makes about 2 1/2 dozen.
