- 1/2 c. sugar
- 3 eggs
- 2 c. mashed potatoes
- 1 c. sweet milk
- 5 tsp. baking powder
- 5 c. flour
- 3 Tbsp. melted shortening
- 1 tsp. salt
- 1/4 tsp. nutmeg
Directions

1Beat mashed potatoes.

2Add melted fat, beaten eggs and milk. Sift dry ingredients together and add to liquid.

3Dough should be soft, yet firm enough to roll.

4Divide dough into four parts. Roll out one part at a time to 3/4-inch thickness.

5Cut with doughnut cutter and drop into deep fat (375°).

6Fry until a golden brown on both sides.

7Drain on absorbent paper.

8Shake in a paper bag containing a mixture of sugar and cinnamon or powdered sugar. This makes approximately 4 1/2 dozen doughnuts.
