  • 2 cups mashed potatoes (without any milk)
  • 2 eggs
  • salt and pepper
  • vegetable oil (for frying)

Directions

    Beat eggs and mix into the mashed potatoes.

    Salt and pepper to taste.

    Drop from a spoon into the hot oil (375 F.) and fry until golden brown.

    (2-3 min).

    Drain on paper towels.

    if the spoon is dipped into boiling water in between every use, each drop will retain the shape of the spoon.
