- 2 cups mashed potatoes (without any milk)
- 2 eggs
- salt and pepper
- vegetable oil (for frying)
Directions

1Beat eggs and mix into the mashed potatoes.

2Salt and pepper to taste.

3Drop from a spoon into the hot oil (375 F.) and fry until golden brown.

4(2-3 min).

5Drain on paper towels.

6if the spoon is dipped into boiling water in between every use, each drop will retain the shape of the spoon.
