- 6 to 10 potatoes
- 30 corn tortillas
- 2 cans Ro-Tel tomatoes
- 2 lb. Velveeta cheese
- 1 lb. hamburger meat
- 1 small onion
Directions

1Soften tortillas by dipping in hot oil (do not cook long, they will be tough).

2Fry potatoes to soft stage.

3Fry ground meat with onions.

4Melt cheese with Ro-Tel tomatoes.

5Roll mixture of meat and potatoes in each tortilla.

6Place in a large baking pan or dish.

7Cover with melted cheese and Ro-Tel mixture.

8Bake at 350° until cheese bubbles.
