- 1 tablespoon oil
- 1 12 cups thawed hash browns
- 3 eggs
- 3 tablespoons milk
- salt & pepper
- 6 mushrooms, sliced
- 14 cup bell pepper
- 14 cup onion
- 12 cup grated cheddar cheese
Directions

1Place oil in warmed frying pan.

2Add onion, pepper and mushrooms; saute.

3Remove from pan, now add the hash browns, stirring once; brown them.

4Beat eggs and milk together add s/p.

5Pour over the hash browns.

6Cook 4-5 minutes, lifting edges occasionally to allow egg mixture to flow to bottom of skillet.

7Add the veggies and the cheese on top.

8Lower heat.

9Place a lid on top till the cheese melts.

10Enjoy.
