Potato Fruit Salad

Ingredients

  • 1 lb. potatoes, cooked, peeled and cut in 1/2 inch cubes
  • 1/2 c. pineapple tidbits
  • 1/2 c. thoroughly drained mandarin orange sections
  • 1/2 c. white raisins
  • 1 Tbsp. grated coconut
  • 1/4 c. sour cream
  • 2 Tbsp. mayonnaise
  • 4 maraschino cherries, quartered
  • lettuce leaves for salad plates or platter
  • salt and pepper to taste

Directions

    Combine the first 4 ingredients.

    In a small bowl, mix together, the next 4 ingredients.

    Add to fruit and potato mixture.

    Add more sour cream if mixture is too dry.

    Add salt and pepper to taste.

    Chill.

    Mound on lettuce leaves or serve on a platter.
