Potato Gnocchi

- 6 lbs potatoes
- 2 cups flour
- 2 eggs
- 4 lbs plum tomatoes, diced
- 2 ounces fresh basil, cut julienne
- 1 tablespoon chopped garlic
- 1 tablespoon extra virgin olive oil
- 2 tablespoons butter
- 12 cup parmesan cheese
- salt and pepper
Directions

1SCRUB the potatoes and place them, unpeeled, in a large pot of boiling water (lightly salted) and COOK for 45 minutes until tender but not overcooked.

2When cool, peel potatoes and mash- then add flour, eggs, salt and pepper.

3Roll dough into long thin rods, and cut into small pieces about 1-inch in length to form the dumplings.

4Bring a large pot of lightly salted water to a boil (add a touch of olive oil).

5Drop gnocchi in and cook for approximately 1 minute until they float to the top.

6Saute garlic in olive oil over medium heat until golden brown.

7Add tomatoes and cook for 3 minutes then add gnocchi and top with basil, butter Parmesan cheese, salt and pepper.
