Potato Gratin

  • 1 small onion, sliced
  • 1 garlic clove, crushed
  • 1 pt. milk
  • 1/2 pt. double cream
  • 1 bay leaf
  • salt and pepper
  • 2 1/2 lb. potatoes, peeled
  • 2 oz. fresh bread crumbs

Directions

    Place onion and garlic clove in a large saucepan with milk, cream and bay leaf.

    Slowly bring to boiling point and immediately remove from heat.

    Let cool for 30 minutes.

    Discard clove of garlic and bay leaf.

    Season.

    Thickly slice potatoes.

    Add to milk and bring to a boil, then remove immediately from heat.

    Using a draining spoon, transfer potato slices to a large shallow ovenproof dish.

    Pour milk over and sprinkle with the bread crumbs.

    Bake at 350° for 1 1/4 hours, or until potatoes are tender and golden brown.
