  • 4 russet potatoes Medium to large, peeled
  • 2 yellow onions Large, diced
  • 4 large eggs lightly beaten
  • 1/3 cup matzo meal
  • 2 teaspoons salt
  • pepper to taste
  • 3/4 cup peanut oil

    Grate potato and onion

    Drain potato onion mixture (squish through a dish towel)

    Place potato onion mixture into a mixing bowl.

    Add eggs, matzo, salt and pepper. Mix well.

    Heat oil in skillet

    Shape a pancake (about 1/2 cup of mixture)

    Add pancake to hot oil and flatten gently

    Fry until deep golden brown, about 5 minutes per side

    Drain on cooling rack or paper towel lined plate
