- 4 russet potatoes Medium to large, peeled
- 2 yellow onions Large, diced
- 4 large eggs lightly beaten
- 1/3 cup matzo meal
- 2 teaspoons salt
- pepper to taste
- 3/4 cup peanut oil
Directions

1Grate potato and onion

2Drain potato onion mixture (squish through a dish towel)

3Place potato onion mixture into a mixing bowl.

4Add eggs, matzo, salt and pepper. Mix well.

5Heat oil in skillet

6Shape a pancake (about 1/2 cup of mixture)

7Add pancake to hot oil and flatten gently

8Fry until deep golden brown, about 5 minutes per side

9Drain on cooling rack or paper towel lined plate

10Serve with sour cream or applesauce
