- 2 lb. potatoes
- 1/2 c. olive oil
- 1/2 c. red bell pepper, minced
- sweet red bell pepper strips
- salt and pepper to taste
- 2 c. sliced onions
- 6 eggs
- 1/2 Tbsp. butter
Directions

1Peel potatoes and slice thinly.

2Rinse in cold water and dry. Salt and pepper.

3Saute onion in oil over low heat until lightly browned.

4Add sweet pepper and potatoes about halfway through cooking.

5Drain and save mixture.

6Wipe pan with paper towel.

7Add butter and melt.
