- 6 medium red or white potatoes
- 2 tomatoes
- 1/2 lb. cheese
- salt and pepper to taste
- 8 large spinach leaves
Directions

1Grate potatoes and place in a bowl of cold water.

2Butter frying pan.

3Take a handful of grated potatoes.

4Squeeze out the excess water and spread evenly on the bottom of pan.

5Sprinkle a pinch of salt and pepper.

6Cover and cook on low heat until potatoes are tender and hold together.

7Flip over.

8Cover and cook until bottom is golden brown.

9Cover omelet with tomato slice and grated cheese.

10Let cheese melt, then add spinach leaf.

11Serve warm.
