Potato Omelet

Ingredients
- 3 medium potatoes
- 1/4 c. butter
- 1 c. diced ham
- 6 eggs
- 1/2 c. Swiss or Jack cheese, diced fine
- 2 Tbsp. milk
- 1/3 c. diced onion
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. chopped parsley
Directions

1Peel potatoes and cube.

2Melt butter in 10-inch skillet.

3Add potatoes and onions; saute until tender and golden, stirring often.

4Add ham and cook a few minutes.

5Beat eggs with milk, salt and pepper.

6Pour over potatoes.

7Sprinkle with parsley and reduce heat.

8With a spatula, lift egg mixture from edge of pan so uncooked mixture can run down.

9When omelet has nearly set, sprinkle with cheese and place under broiler to melt cheese.

10Cut into wedges to serve.

11Serves 4 to 6.
