Potato Pancakes

- 3 lb. pared raw potatoes
- 1 lb. onions (or slightly less)
- 3 eggs, separated
- 1 tsp. salt
- dash of pepper
- 10 to 12 Tbsp. flour
Directions

1Grate or grind potatoes and onions.

2Drain in colander for a few minutes.

3Meanwhile, separate eggs.

4Beat whites until stiff. Mix together ground potatoes, onions, egg yolks, flour, salt and pepper.

5Fold in beaten egg whites.

6Fry in hot fat over medium heat until golden on one side.

7Turn over and fry second side. Drain on paper towels.

8Keep checking temperature so pancakes don't fry too fast or too slow.

9Wonderful with applesauce and/or sour cream.

10Serves 6.
