Potato Pancakes

Ingredients

  • 3 lb. pared raw potatoes
  • 1 lb. onions (or slightly less)
  • 3 eggs, separated
  • 1 tsp. salt
  • dash of pepper
  • 10 to 12 Tbsp. flour

Directions

    Grate or grind potatoes and onions.

    Drain in colander for a few minutes.

    Meanwhile, separate eggs.
  4. 4
    Beat whites until stiff. Mix together ground potatoes, onions, egg yolks, flour, salt and pepper.

    Fold in beaten egg whites.

    Fry in hot fat over medium heat until golden on one side.

    Turn over and fry second side. Drain on paper towels.

    Keep checking temperature so pancakes don't fry too fast or too slow.

    Wonderful with applesauce and/or sour cream.
