- 16 -18 baking potatoes, scrubbed, peeled and cubed
- 12 cup heavy whipping cream
- 12 cup butter
- 1 tablespoon salt
- 12 cup diced onion
- 4 cups all-purpose flour
- 1 tablespoon parsley
- 2 tablespoons vegetable oil
Directions

1scrub, peel and cube potatoes.

2in a big heavy pot boil until they are soft.

3drain liquid and mash.

4add whipping cream, butter, parsley, salt, onion and flour and form into one inch thick patties.

5fry in vegetable oil until golden brown and crisp on all sides.

6sprinkle with salt and drain oil off on a paper towel and cool for 5 minutes before serving with sour cream.
