- 2 lb. potatoes (about 6 medium)
- 2 eggs
- 1/3 c. flour
- 1 small onion, peeled and grated
- salt and pepper to taste
- fat (for frying)
- applesauce
Directions

1Wash and peel potatoes.

2Put in cold water while peeling the others.

3Grate potatoes very fine; squeeze out moisture.

4Mix with eggs, flour, onion, salt and pepper, adding enough flour to make a fairly firm mixture.

5Drop by tablespoon into hot fat in a skillet.

6Fry until crisp and golden on both sides.

7Take out with spatula and drain on absorbent paper.

8Serve with applesauce sprinkled with salt.
