- 5 Tbsp. margarine
- 6 large potatoes, sliced, peeled or unpeeled
- 1 small onion, diced
- salt and pepper to taste
- 1 (8 oz.) tomato sauce
- 1 (11 oz.) shredded Mozzarella cheese
- 1 (3 1/2 oz.) pkg. pepperoni slices
Directions

1Spray skillet with Pam.

2Melt margarine in pan.

3Arrange potatoes and onions in bottom of skillet.

4Sprinkle with salt and pepper.

5Cover and cook 20 minutes or until potatoes are lightly browned and tender.

6Sprinkle with 1/2 can of tomato sauce.

7Next sprinkle with 1/2 cheese.

8Add all of pepperoni.

9Add remaining sauce.

10Add all remaining cheese.

11Cover and cook until the casserole is heated through and the cheese is melted.
