- 1 (1/4 oz.) pkg. yeast
- 1/2 c. warm water (110~ to 115~)
- 1 c. milk
- 3/4 c. shortening
- 1 1/4 c. leftover mashed potatoes
- 1/2 c. sugar
- 2 tsp. salt
- 8 to 8 1/2 c. all-purpose flour, divided
- 2 eggs, beaten
Directions

1Dissolve yeast in water and set aside.

2In saucepan, combine milk, shortening and potatoes.

3Cook and stir over low heat until shortening is melted.

4Remove from heat and place in large bowl with sugar, salt, 2 cups flour and yeast mixture.

5Add eggs and mix well.

6Cover loosely and allow to stand for 2 hours (dough will be spongy).

7Stir in enough of remaining flour to make soft dough.
