- 2 pkg. yeast
- 1 1/2 c. warm water
- 2/3 c. sugar
- 2 eggs
- 2/3 c. solid shortening
- 1 1/2 tsp. salt
- 3 c. all-purpose flour
- 3 c. bread flour
- 1 c. mashed potatoes (no milk or seasoning)
Directions

1Dissolve yeast in warm water with 1 teaspoon sugar added and let stand 5 to 10 minutes.

2Mix in 2 cups flour, potatoes and shortening.

3Add eggs and remaining sugar.

4Add remaining 4 cups flour and salt; mix well.

5Let rise 1 1/2 hours until doubled. Slightly knead dough on floured surface and roll out 1/2-inch thickness.

6Cut into 2 inch circles and place on buttered baking sheets, brushing tops with melted butter.

7Let rise 1 hour and bake at 400° for 15 to 20 minutes until golden brown.
