Potato Rolls

Ingredients

  • 1 yeast cake
  • 2 Tbsp. lukewarm water
  • 2 medium cooked potatoes
  • 1/2 c. milk
  • 1/4 c. sugar
  • 1/4 c. shortening
  • 2 tsp. salt
  • 1/2 c. cold water
  • 1 egg
  • 4 1/2 to 5 c. flour

Directions

    Dissolve yeast in 2 tablespoons lukewarm water.

    Scald milk, sugar, salt and shortening in top of double boiler.

    Mash potatoes until smooth.

    Add scalded mixture and cold water.

    Cool to lukewarm temperature.

    Add yeast and 1 1/2 cups flour; beat.

    Stir in remaining flour.

    Knead on board and place in warm place for 1 1/2 hours. Shape into rolls; bake at 400° for 20 minutes.
