Potato Rolls

Ingredients

  • 1 1/2 c. warm water
  • 2 pkg. dry yeast
  • 2/3 c. sugar
  • 1 1/2 tsp. salt
  • 2/3 c. shortening
  • 2 eggs
  • 1 c. lukewarm mashed potatoes
  • 6 to 7 c. flour

Directions

    Measure water in mixing bowl.

    Add yeast and dissolve.

    Stir in sugar, salt, shortening, eggs and potatoes.

    Mix in flour with hands until dough is easy to handle.

    Turn onto lightly floured board and knead until smooth.

    Place in greased bowl and cover with damp cloth.

    Let rise in refrigerator for 6 to 8 hours.

    Use as needed.

    Take out of refrigerator and let rise amount that is needed.

    Bake at 425° until brown.

    You don't have to roll these out.
