Potato Rolls

Ingredients
- 1 1/2 c. warm water
- 2 pkg. dry yeast
- 2/3 c. sugar
- 1 1/2 tsp. salt
- 2/3 c. shortening
- 2 eggs
- 1 c. lukewarm mashed potatoes
- 6 to 7 c. flour
Directions

1Measure water in mixing bowl.

2Add yeast and dissolve.

3Stir in sugar, salt, shortening, eggs and potatoes.

4Mix in flour with hands until dough is easy to handle.

5Turn onto lightly floured board and knead until smooth.

6Place in greased bowl and cover with damp cloth.

7Let rise in refrigerator for 6 to 8 hours.

8Use as needed.
-
9Take out of refrigerator and let rise amount that is needed.

10Bake at 425° until brown.

11You don't have to roll these out.
