  • 10 lb. red bliss potatoes
  • 1 large onion, diced
  • 3 Tbsp. celery seed
  • 4 hard-cooked eggs, diced
  • 32 oz. Hellmann's mayonnaise
  • 3 Tbsp. sugar
  • 1 Tbsp. paprika
  • 1 large green bell pepper, diced
  • 1 tsp. salt (optional)
  • 2 hard-cooked eggs, sliced
  • 2 to 3 Tbsp. mustard
  • 4 Tbsp. vinegar

Directions

    Boil peeled potatoes with salt.

    Drain and set aside until cooled.

    Dice potatoes into a large mixing bowl.

    Add the green peppers, onions, celery seed and diced eggs to the bowl.

    Add mayonnaise and mustard (you should add just enough mustard to color the salad).

    Combine the sugar and vinegar; pour over the salad.

    Gently mix.

    Garnish with sliced eggs and paprika.
