Ingredients
- 6 medium size potatoes
- 1 1/2 Tbsp. vinegar
- 3 Tbsp. oil
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/8 medium size onion, grated or chopped finely
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 1/2 c. mayonnaise
Directions

1The night or morning before serving, wash and steam or boil the potatoes in their skins.

2As they steam or boil, combine vinegar, oil, salt, pepper and grated onion for the marinade.

3When potatoes are tender, peel them while they are still hot and dice into the marinade.

4Add celery and green pepper; toss lightly so they do not break or become mushy.

5Refrigerate.

6Add mayonnaise a half hour before serving.

7Serves 6.
