Potato Salad

Ingredients

  • 3 potatoes (peel and cut into bite sizes)
  • 1/3 carrot (peel and cut into small bite sized pieces)
  • 1/2 onion (peel and slice thinly)
  • 1 cucumber (slice thinly)
  • 2 slices ham (cut into 1 cm squares)
  • 1 boiled egg (peel and chop)
  • 3-4 Tbsp mayonnaise (to taste)
  • 2 Tbsp vinegar
  • 2 tsp mustard
  • to taste salt, pepper

Directions

    Add the potatoes and carrot to cold salted (2 tsp) water and then bring to a boil until cooked (carrot will cook earlier than potatoes).

    Drain and immediately pour in vinegar and mash only the potatoes.

    Let them cool.

    Soak onion and cucumber in cold salted (2 tsp) water for 10 minutes.

    Drain and squeeze well.

    Combine all ingredients in a bowl.
