1Cut baked potatoes in half lengthwise.

2Scoop out the insides, leaving a thin layer of potato in skin.

3Cut shells in half again lengthwise.

4Brush with butter and seasonings.

5Add toppings if desired and broil until brown, about 5 minutes.
