Ingredients

  • 10 to 12 small/medium baking potatoes
  • 1/2 stick margarine
  • 1 lb. bacon
  • 1 c. shredded Monterey Jack cheese
  • 1 c. shredded Cheddar cheese
  • sour cream (optional)
  • salt and pepper to taste

Directions

    Punch holes in potatoes with fork and coat with thin layer of shortening.

    Bake in 350° oven for approximately 1 hour or until done.

    Cut potatoes lengthwise and scoop insides out.
  4. 4
    Insides can be saved and used at a later date.

    Brush with melted margarine on insides of potatoes after they have been placed on cookie sheet. Place in oven for 10 minutes.

    Remove and fill with cooked bacon that has been crumbled.

    Mix the 2 cheeses, add to bacon in potato and return to oven until cheese is melted.

    Salt and pepper to taste; sour cream can be added if desired.

    Serve warm.
