- 10 to 12 small/medium baking potatoes
- 1/2 stick margarine
- 1 lb. bacon
- 1 c. shredded Monterey Jack cheese
- 1 c. shredded Cheddar cheese
- sour cream (optional)
- salt and pepper to taste
Directions

1Punch holes in potatoes with fork and coat with thin layer of shortening.

2Bake in 350° oven for approximately 1 hour or until done.

3Cut potatoes lengthwise and scoop insides out.

4Insides can be saved and used at a later date.

5Brush with melted margarine on insides of potatoes after they have been placed on cookie sheet. Place in oven for 10 minutes.

6Remove and fill with cooked bacon that has been crumbled.

7Mix the 2 cheeses, add to bacon in potato and return to oven until cheese is melted.

8Salt and pepper to taste; sour cream can be added if desired.

9Serve warm.
