  • 5 1/4 ounces potatoes peeled and ct
  • salt and ground black pepper
  • 1 3/4 tablespoons butter
  • 7/8 cup vegetable broth
  • 6 3/4 tablespoons cream
  • 1 cup mushrooms diced
  • 1 onion minced
  • 1 olive oil generous tbsp.
  • nutmeg
  • 1 fresh thyme generous tbsp. plus additional

Directions

    Boil the potatoes in water with a pinch of salt for 15 minutes, until tender. Mash and add the butter.

    Heat the broth and add to the potatoes.

    Saute the mushrooms and onion in a little olive oil in a skillet. Add to the potato mixture, reserving a few of the mushrooms. Season with salt, pepper, nutmeg, and thyme.

    Ladle the soup into serving bowls and garnish with the reserved mushrooms and additional thyme.
