Potato Soup

  • 4 large potatoes
  • 2/3 c. butter
  • 2/3 c. flour
  • 4 green onions, chopped
  • 12 slices cooked bacon
  • 1 1/4 c. shredded Cheddar cheese
  • 8 oz. sour cream

Directions

    Bake potatoes and let cool.

    Scoop out potatoes.

    Melt butter in heavy saucepan. Add flour.

    Stir until smooth. Cook 1 minute, stirring constantly.

    Gradually add milk.

    Cook until thick and bubbly.

    Put into crock-pot.

    Add potato pulp, salt, pepper, 2 pounds onions, 1/2 cup bacon and 1/2 cup cheese.

    Cool in crock-pot. Stir in sour cream.

    May add more milk if too thick.
