Potato Soup

Ingredients

  • 1 Tbsp. onion, chopped
  • 1/2 (6 oz.) pkg. Canadian bacon, chopped (about 1/2 c.)
  • 2 c. water
  • 4 med. potatoes, diced
  • 1 (12 oz.) can evaporated skim milk
  • 3 Tbsp. butter buds
  • 1/4 to 1 tsp. salt
  • 1/8 tsp. pepper

Directions

    Spray bottom of 3 quart sauce pan with cooking spray.

    Cook onions over medium heat until tender.

    Add bacon, water and potatoes.

    Simmer for 15-20 minutes until potatoes are fork tender.

    With potato masher or large fork mash some of the cooked potatoes.

    Add remaining ingredients.

    Heat thoroughly.

    Do not boil.
