- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 2 Tbsp. oil
- 3 c. cubed potatoes
- 1 qt. water
- 1/2 c. butter or margarine
- 1 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbsp. all-purpose flour
- 1 1/2 c. milk
Directions

1In a large Dutch oven, saute celery and onion in oil for about 1 to 2 minutes or until tender.

2Do not brown them.

3Add the potatoes, water, butter, salt and black pepper.

4Bring to a boil. Reduce heat to medium-high and cook until the potatoes are fork-tender, not mushy.
