Potato Soup

- 6 medium potatoes, cubed
- 5 stalks celery, chopped
- 2 carrots, diced
- 2 qt. water
- 1 large onion, chopped
- 6 Tbsp. margarine
- 6 Tbsp. flour
- 1 1/2 c. milk
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1Combine potatoes, celery, carrots and water; cook until tender.

2Melt margarine in large saucepan; add onions.

3Saute until translucent.

4Stir in flour, salt and pepper.

5Pour in milk and stir until thickened.

6When potatoes are tender, dip out some of the water; pour flour mixture into potatoes and stir until mixed well.

7If too thick, add some of the water back until of desired consistency.

8Reheat until hot.
