Potato Soup

Ingredients
- 5 lb. diced white potatoes
- 1 chopped medium bell pepper
- 1 bunch chopped green onions or 1 medium chopped white onion
- 3 or 4 stalks chopped celery
- 1 Tbsp. chopped parsley
- salt and pepper to taste
- 1 stick margarine
- 2 cans evaporated milk
- 1 pkg. grated cheese
- bacon bits and sour cream (optional)
Directions

1Cook potatoes until tender; do not overcook.

2Drain all but 1 cup of water from potatoes.

3Add evaporated milk, salt and pepper to suit taste.

4Saute pepper, celery and onion in margarine until tender.

5Combine sauteed vegetables and parsley to potatoes. Simmer for 15 to 20 minutes.

6Serve with grated cheese, bacon bits and sour cream as desired.

7Always better the second day.
