  • 2 to 3 lb. white potatoes
  • 1/4 c. chopped onions
  • 1/2 c. chopped celery
  • 1 shredded carrot
  • 2 large cans evaporated milk
  • 1/4 lb. bacon
  • 1 chicken bouillon cube
  • salt to taste
  • 3 Tbsp. butter
  • parsley flakes

Directions

    Wash potatoes thoroughly; peel and dice.

    Simmer with water in soup pot.

    When potatoes are almost done, pour off enough water so that potatoes are barely covered.

    Add onions, celery, carrot and canned milk.

    Simmer until onion and celery are tender.
