- 2 to 3 lb. white potatoes
- 1/4 c. chopped onions
- 1/2 c. chopped celery
- 1 shredded carrot
- 2 large cans evaporated milk
- 1/4 lb. bacon
- 1 chicken bouillon cube
- salt to taste
- 3 Tbsp. butter
- parsley flakes
Directions

1Wash potatoes thoroughly; peel and dice.

2Simmer with water in soup pot.

3When potatoes are almost done, pour off enough water so that potatoes are barely covered.

4Add onions, celery, carrot and canned milk.

5Simmer until onion and celery are tender.
