- 3 c. onions, thinly sliced
- 3 c. potatoes, peeled and thinly sliced
- 1 qt. chicken broth
- 1 c. heavy cream
- 5 Tbsp. lightly salted butter
- salt and pepper to taste
Directions

1Peel and slice potatoes and onions.

2Put in pot with chicken broth.

3Bring to a boil.

4Salt and pepper to taste.

5Simmer for 40 minutes or until potatoes are tender.

6Put mixture in blender and puree.

7(For best soup, leave it chunky with bits of potatoes when blending.)

8Put mixture back into pot; add cream and butter.

9Cook until warm.

10Serves 4.
