Potato Soup

  • 3 c. onions, thinly sliced
  • 3 c. potatoes, peeled and thinly sliced
  • 1 qt. chicken broth
  • 1 c. heavy cream
  • 5 Tbsp. lightly salted butter
  • salt and pepper to taste

Directions

    Peel and slice potatoes and onions.

    Put in pot with chicken broth.

    Bring to a boil.

    Salt and pepper to taste.

    Simmer for 40 minutes or until potatoes are tender.

    Put mixture in blender and puree.

    (For best soup, leave it chunky with bits of potatoes when blending.)

    Put mixture back into pot; add cream and butter.

    Cook until warm.

    Serves 4.
