Ingredients
- 3 to 4 c. potatoes, boiled (canned or frozen)
- 2/3 c. all-purpose flour
- 6 c. 2% reduced fat milk
- 1 c. (4 oz.) Cheddar cheese
- 1/2 tsp. black pepper
- 1 c. reduced fat sour cream
- 1 tsp. salt
- 6 bacon slices, cooked and crumbled (optional)
Directions

1Lightly spoon flour into a dry measuring cup; level with a knife.

2Place flour in large pot, gradually add milk, stirring with a whisk until blended.

3Cook over medium heat until thick and bubbly.

4Add potatoes, cheese, salt and pepper and bacon.

5Stir until cheese melts.

6Remove from heat.

7Stir in sour cream.

8Cook over low heat for 10 minutes or until thoroughly heated (do not boil).
