- 3 small potatoes
- 2 slices onion
- 1 Tbsp. flour
- 1/4 tsp. celery salt or celery stalk
- pinch of cayenne pepper
- 1 qt. milk
- 3 Tbsp. butter
- 1 tsp. salt
- 1 tsp. chopped parsley
Directions

1Cook potatoes in boiling water with salt.

2When soft, run through a stainer.

3Boil together milk and onions; remove onions and add milk slowly to potatoes, mixing well with a whisk.

4Melt half the butter.

5Add all dry ingredients and stir until well mixed, then stir into hot soup.

6Boil 1 minute, strain and add remaining butter.

7Sprinkle with parsley, if desired.

8If soup is too thick, add a little more milk.
