Potato Soup

Ingredients
- 3 leeks or 1 bunch green onions
- 6 to 8 medium potatoes
- salt and pepper to taste
- 3/4 pt. sour cream
Directions

1Cube potatoes and cut leeks or onions into small pieces. Combine in soup pot.

2Season with salt and pepper.

3Add water just to cover.

4Cook until potatoes are done; puree.

5Cool and add sour cream.

6Sprinkle with parsley and serve hot or warm.
