Ingredients

  • 8 cups potatoes
  • 2 cups onion
  • 12 Tbs butter (1 1/2 sticks)
  • 2 cups water
  • 2 Tbs salt (you can use 1)
  • 1/2 tsp pepper
  • 8 cups milk (use 5 + )
  • 4 Tbs parsley (if you want)
  • 4-6 cloves garlic

Directions

    Add chopped onions and potatoes to melted butter along with the water. Season with salt and pepper.

    Cover and cook slowly until potatoes are very soft.

    Mash potatoes with masher until fairly smooth. Add milk. Continue cooking until soup comes to a boil. Add chopped parsley; taste for seasoning. If desired, add garlic.
