- 2 tsp. vegetable oil
- 2 Tbsp. diced onion
- 1/2 garlic clove, minced
- 6 oz. peeled, cooked potatoes, cut into cubes
- 1/2 c. each: cubed red and green bell peppers (1/2-inch cubes)
- dash each salt and pepper
Directions

1In an 8 or 9-inch skillet, heat oil; add onion and garlic and saute until onion is soft.

2Add potatoes and bell peppers; saute, stirring until potatoes are lightly browned and peppers are tender-crisp.

3Stir in salt and pepper and saute for 2 minutes longer.
