- 1/2 c. butter or margarine, at room temperature
- 2 lb. Idaho potatoes
- 1 tsp. salt
- 1/8 tsp. pepper
Directions

1Preheat oven to 425°.

2Using 3 tablespoons of butter or margarine grease a heavy 8-inch skillet.

3Peel potatoes.

4Cut potatoes crosswise into thin slices.

5Put potatoes in a large bowl and toss gently with salt and pepper.

6Arrange in layers covering with butter.

7Place skillet over medium-high heat and cook 3 minutes to brown the bottom of potatoes.

8Remove from heat and cover with foil.

9Press down firmly with 9-inch Pyrex dish.

10Place skillet and dish in center of rack in oven.

11Bake 30 minutes. Remove Pyrex dish and foil; bake 5 more minutes.

12Let stand 5 minutes before serving.
