Potatoes Hashed In Cream

Ingredients

  • 3 Tbsp. butter
  • 1 tsp. flour
  • 1 c. heavy cream or (undiluted evaporated milk)
  • 1 1/4 tsp. salt
  • 1 tsp. pepper
  • 2 Tbsp. finely chopped onion
  • 1/4 tsp. nutmeg
  • 4 potatoes, peeled, cooked and chopped

Directions

    Melt 2 tablespoons butter, then stir in flour gradually.

    Add cream and cook, stirring constantly, until cream bubbles and sauce has thickened.

    Add salt, pepper, onion and nutmeg.

    Mix well. Add the potatoes to mixture and mix well.

    Pat into lightly greased 1 quart baking dish.

    Dot with remaining butter.

    Bake at 350° until browned, about 30 minutes.
