- 3 Tbsp. butter
- 1 tsp. flour
- 1 c. heavy cream or (undiluted evaporated milk)
- 1 1/4 tsp. salt
- 1 tsp. pepper
- 2 Tbsp. finely chopped onion
- 1/4 tsp. nutmeg
- 4 potatoes, peeled, cooked and chopped
Directions

1Melt 2 tablespoons butter, then stir in flour gradually.

2Add cream and cook, stirring constantly, until cream bubbles and sauce has thickened.

3Add salt, pepper, onion and nutmeg.

4Mix well. Add the potatoes to mixture and mix well.

5Pat into lightly greased 1 quart baking dish.

6Dot with remaining butter.

7Bake at 350° until browned, about 30 minutes.

8Serves 4.
