- 5 medium-size potatoes
- 3/4 c. butter or margarine
- 1 c. Italian style bread crumbs
- 1/2 c. chopped onion
- 1/2 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Directions

1Preheat oven to 325°.

2Peel potatoes.

3Dice into 1/2-inch cubes, about 8 cups.

4Melt 1/2 cup of butter.

5Cool and pour into plastic bag.

6Add potatoes, bread crumbs and onion.

7Shake until potatoes are evenly coated.

8Line a 14 x 10-inch baking pan with foil.

9Pour potatoes in.

10Dot with butter.

11Sprinkle with cheese. Bake uncovered until potatoes are soft, about 45 minutes.
