Potatoes Parisienne

- 2 1/2 lb. potatoes (approximately)
- salt and pepper to taste
- 3 Tbsp. butter or margarine
Directions

1Peel the potatoes and with a melon ball cutter, form as many potato balls as possible with each potato, placing them in cold water to prevent discoloration.

2Place potato balls in boiling water (lightly salted) and boil for 4 minutes.

3Drain.

4Melt butter in saute pan and when medium-hot, add potato balls. Saute until lightly golden.

5Serve immediately.

6May be prepared up to time of sauteing.

7Keep refrigerated until ready to use.
