  • 4 Tbsp. butter, cut in pieces
  • 3 cloves garlic, minced
  • 2 Tbsp. parsley, chopped
  • 1 1/2 c. shredded cheese (Gruyere or Swiss)
  • 1/4 tsp. pepper
  • 2 1/2 lb. sliced unpeeled potatoes
  • 1 1/2 c. chicken or beef stock

    Preheat oven to 350°.

    Butter a 2-quart baking dish or souffle dish.

    In a bowl mix together garlic, parsley, cheese and pepper. Layer 1/3 of potatoes, then 1/3 of garlic mixture.

    Dot with 1 tablespoon butter; cut in pieces.

    Repeat layers; top with potatoes.

    Pour stock over potatoes and put on the last 1/3 of garlic mixture.

    Dot with butter.

    Cover with foil and bake 30 minutes.

    Uncover and bake 30 to 40 minutes more, until brown and potatoes are tender.
