- 8 to 10 medium potatoes, peeled and cubed
- 1 10 3/4 oz. can cream of chicken soup, undiluted
- 3 c. shredded cheddar cheese, divided, 12 oz.
- 1 c. sour cream, 8 oz.
- 3 green onions, chopped
- salt and pepper, to taste
Directions

1Place potatoes in a saucepan and cover with water.

2Bring to a boil; cover and cook until almost tender.

3Drain and cool. Combine soup, 1 1/2 cups cheese, sour cream, onions, salt and pepper; stir in potatoes.

4Place in a greased 13 X 9 X 2 baking dish.

5Sprinkle with remaining cheese.

6Bake, uncovered, at 350 degrees for 25 to 30 minutes or until heated through.

7Makes 8 to 10 servings.
