- 1/2 lb. bacon
- 2 c. celery, finely chopped
- 2 c. onion, finely chopped
- 2 c. bell pepper, finely chopped
- 2 (16 oz.) cans stewed tomatoes (undrained)
- 4 cans black-eyed peas, drained and washed
- salt and pepper to taste
Directions

1Fry bacon in skillet; remove, drain, crumble and set aside. In a small amount of the bacon grease, saute celery, onion and bell pepper until tender.

2Add all tomatoes and cook together 15 to 20 minutes on low flame.

3Add drained peas, salt and pepper. Cook 10 more minutes on low flame.

4Add crumbled bacon just before serving.
